Lemon- Blueberry Glazed Scones


  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 Tbsp. sugar (optional)
  • 1 Tbsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 Tbsp. lemon zest
  • 3 Tbsp. butter, chilled and cut into pieces
  • 1/4 cup extra virgin olive
  • 3/4 cup milk
  • 1 cup fresh blueberries
Optional Glaze:
  • 2 Tbsp. lemon juice
  • 1 cup powdered sugar
Mix together all purpose flour, wheat flour, sugar, baking soda, salt and lemon zest. Cut up the 3 Tbsp. of butter into very small cubes; add to the mixture. Mix with a fork until the mixture looks clumpy. Add olive oil and milk; mix well. Fold in the blueberries.
Set the dough on a floured surface and press the dough until about 1" thick. Using a circle cookie cutter (or a glass) cut out 12 scones and place them on a lightly greased cookie sheet. Bake at 400 degrees for about 20 minutes or until golden brown.

If you choose to glaze your scones allow them to cool before doing so.

Each Scone has about 170 calories.

Turkey Burger




Turkey Burger

Patties:
1 lb. ground turkey breast
2 Italian turkey sausages, removed from casing and crumbled
4 cloves garlic, minced
1 Vidalia onion, diced
1 cup pepper jack cheese, diced into very small cubes
2 tbsp. Italian seasoning
½ cup Panko breadcrumbs
2 egg white


Whole wheat Kaiser rolls,
Extra Virgin Olive Oil
Italian seasoning
Lettuce
1 tomato, sliced
1 onion, sliced
1 avocado, Avocado sliced

Dressing:
½ cup light Mayo
2 tbsp. hot sauce (not salsa)
Pinch of fresh cilantro, chopped fine
1 tsp. Italian seasoning


Start by making the dressing for the turkey burger. Combine ½ cup light mayonnaise with 2 tbsp. hot sauce, 1 tsp. Italian seasoning, and a pinch of cilantro. Refrigerate until you're ready to use.

Mix together the 1 lb. ground turkey breast, turkey sausages, garlic, onion, pepper jack cheese, Italian seasoning, panko breadcrumbs, and the egg whites. Make sure it’s well mixed (use your hands for best results). Form into patties and place on the grill. Cook about 4 minutes on each side. While those are cooking, brush your rolls or hamburger buns with extra virgin olive oil and sprinkle with Italian seasoning. When the burgers are done cooking and removed from the grill place the buns on the grill until they have a slight crunch. (both Sides) It’s time to assemble the burger; spread the dressing on the roll, place one patty on a roll , add the lettuce, tomato, onion, and avocado. Enjoy!

I've decided to start this blog to share with all of you my love for healthy, clean eating. I've been creating recipes over the past few months and came up with a few great ones so far...(in my own humble and personal opinion of course:-) ) I would like to share these recipes with all of you and get some feedback, as my goal is to someday write a cookbook dedicated to healthy, DELICIOUS recipes to help all of us start living a healthier life :-)

P.S. These recipes will NOT keep you in the kitchen all day. Nobody wants to slave over a hot stove all day....nor do I, when I could be spending that time with my one year old daughter :-)
